That is Chef Eric Ripert, owner of the prestigious Michelin starred restaurant in NYC he mentions in the video. Bucket list place.
He was a good friend of Chef Anthony Bourdain and he appeared in Bourdain’s TV shows a while back. Bourdain tragically died by suicide a couple of years ago and it was Ripert that found him. I believe they were working in France on a TV show episode.

Yes, tragic.
What I really appreciate about Ripert is that he makes cooking look simple. True mark of a great chef. Bourdain’s quest for the unexpected was always something.

That’s why I always love Jacques Pepin. He’s always been my favorite chef. His eggplant & tomato terrine was so simple and so delicious. It is a staple for dinner when my tomatoes and eggplant arrive in May.
